Description

French Silk Pie Cookies are a luscious combination of silky chocolate pie filling and soft, chewy cookies. With a rich cocoa cookie base and a fluffy chocolate mousse center, each bite is topped with whipped cream and chocolate shavings for an indulgent treat.

Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ⅓ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips, melted
  • ¼ cup unsweetened cocoa powder
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • Whipped cream (prepared or homemade)
  • Chocolate shavings or chocolate curls (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
  2. Beat in the egg and vanilla extract until well incorporated.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually mix into wet ingredients just until combined.
  4. Using a cookie scoop or tablespoon, form dough balls and place on a parchment-lined baking sheet, spaced 2 inches apart.
  5. Bake for 10-12 minutes, or until edges are set. Let cookies cool completely on a wire rack.
  6. For the filling, mix melted chocolate chips, cocoa powder, heavy cream, powdered sugar, and vanilla in a medium bowl. Whip with an electric mixer until light and fluffy.
  7. Spread or pipe a generous dollop of filling onto half of the cooled cookies. Top with the remaining cookies to form sandwiches.
  8. Finish with a swirl of whipped cream and garnish with chocolate shavings or curls.

Notes

  • Use room temperature ingredients for best texture and mixing.
  • Do not over-mix cookie dough to avoid tough cookies.
  • Let cookies cool completely before filling to maintain structure.
  • Chilling the dough before baking helps prevent spreading.
  • Store in an airtight container at room temperature for 3 days or refrigerate for up to a week.
  • Freeze for up to 3 months with parchment between layers; thaw before serving.
