Description
A delightful twist on a classic dish, this French Onion Pasta Soup Bowl features rich, savory caramelized onions mingling with tender pasta in a warm, comforting broth.
Ingredients
Scale
- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 cups pasta (such as small shells or elbow macaroni)
- 1 cup Gruyère cheese, shredded
- Salt and black pepper to taste
- 1 baguette, sliced into 1-inch pieces
Instructions
- In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 25-30 minutes, or until the onions are deeply caramelized and golden brown.
- Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the beef broth, then add the dried thyme and bay leaves. Bring the mixture to a simmer and let it cook for about 10 minutes.
- While the soup is simmering, cook the pasta in a separate pot according to the package instructions until al dente. Drain and set aside.
- Remove the bay leaves from the soup. Stir in the cooked pasta and season with salt and black pepper to taste. Let the soup simmer for another 5 minutes.
- While the soup is simmering, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes.
- Ladle the French onion pasta soup into bowls. Top each serving with a generous amount of shredded Gruyère cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown.
- Serve the soup hot, accompanied by the toasted baguette slices for dipping.
Notes
- For a gluten-free option, use gluten-free pasta.
- If you’re vegan, replace the cheese with a dairy-free alternative.
- Consider adding vegetables like carrots or bell peppers for extra flavor.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- When reheating, add a splash of broth to loosen the soup.
