Description
Crispy Sweet Potato Red Lentil Patties are a delicious and nutritious dish packed with flavor and a delightful texture, perfect for any occasion.
Ingredients
Scale
- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 1 cup breadcrumbs (or gluten-free alternative)
- Olive oil for frying
Instructions
- Boil the sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and mash in a bowl.
- In a separate pot, cook the red lentils in water until soft, about 10-15 minutes. Drain excess water and add to the mashed sweet potatoes.
- Add chopped onion, minced garlic, cumin, ground coriander, salt, and pepper to the mixture. Stir until well combined, then fold in the breadcrumbs.
- Shape the mixture into patties. Heat olive oil in a frying pan over medium heat and cook the patties for 4-5 minutes on each side until golden brown and crispy. Remove and place on a paper towel to absorb excess oil.
Notes
- Let the mixture chill in the fridge for about 30 minutes before forming patties for better shape retention.
- Ensure the oil is hot enough before adding patties for perfect crispiness.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- For freezing, place patties in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag.
