Description
A delicious and crispy keto-friendly onion rings recipe that is low in carbs and perfect for snacking or as a side dish.
Ingredients
Scale
- 2 large onions (preferably sweet onions)
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil or cooking spray (for frying)
Instructions
- Prepare the onions by peeling and slicing them into thick rings, about 1/2 inch wide.
- Set up your breading station by whisking the eggs in one bowl and mixing the almond flour, Parmesan cheese, garlic powder, paprika, salt, and black pepper in another bowl.
- Dip each onion ring into the egg mixture, allowing excess to drip off, then coat it in the almond flour mixture.
- Heat oil in a deep skillet over medium heat and fry the breaded onion rings in batches for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Notes
- For a nut-free option, use crushed pork rinds instead of almond flour.
- For lactose intolerance, replace Parmesan cheese with nutritional yeast.
- Double-breading the onion rings can add extra crunch.
