Description

Crispy Baked Coconut Shrimp is a delightful dish that combines crunch and flavor, featuring shrimp coated in a crispy coconut crust, perfect for parties or cozy dinners.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cooking spray or oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse the shrimp under cold water and pat them dry with paper towels.
  2. In three separate bowls, place the flour, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs. Season the flour with salt, pepper, garlic powder, and paprika.
  3. Dip each shrimp into the flour, shaking off the excess, then into the beaten eggs, and finally coat with the coconut and breadcrumb mixture.
  4. Place the coated shrimp on a baking sheet lined with parchment paper. Lightly spray with cooking spray or drizzle with oil. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

  • For gluten-free, use almond flour instead of all-purpose flour.
  • Swap eggs with a flaxseed mixture for a vegan option.
  • Try using unsweetened coconut for a less sweet flavor.
  • For added spice, mix in some cayenne pepper with the breadcrumbs.
