Description
A rich and flavorful salmon dish topped with a creamy roasted red pepper sauce, perfect for any occasion.
Ingredients
Scale
- 4 salmon fillets (about 6 oz each)
- 1 cup roasted red peppers (jarred or homemade)
- 4 oz cream cheese (softened)
- 2 cloves garlic (minced)
- 2 tablespoons lemon juice (freshly squeezed)
- 1/4 cup fresh basil (chopped)
- 2 tablespoons olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a blender or food processor, combine the roasted red peppers, cream cheese, minced garlic, lemon juice, and half of the chopped fresh basil. Blend until smooth and creamy. Season with salt and pepper to taste. Set aside.
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon fillets skin-side down and sear for about 4-5 minutes.
- Carefully flip the salmon fillets over and pour the creamy roasted red pepper sauce over the top of each fillet.
- Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the salmon is cooked through.
- Remove the skillet from the oven and sprinkle the remaining fresh basil over the top. Serve hot with your favorite sides.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, place the salmon in the oven at 350°F (175°C) for about 10 minutes.
- For a vegan version, substitute salmon with grilled eggplant or portobello mushrooms and use a plant-based cream.
