Description

A delicious plate of creamy mushroom and spinach gnocchi, combining rich flavors with a soft, pillowy texture, perfect for cozy dinners or special occasions.

Ingredients

Scale
  • 500 grams gnocchi (fresh or store-bought)
  • 200 grams fresh spinach (washed and roughly chopped)
  • 250 grams mushrooms (sliced, any variety such as cremini or button)
  • 3 cloves garlic (minced)
  • 250 ml heavy cream
  • 100 grams Parmesan cheese (grated, plus extra for serving)
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Start by boiling a large pot of salted water. Once it’s boiling, add the gnocchi. Cook them according to the package instructions, usually until they float to the top. This typically takes about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 5-7 minutes, or until the mushrooms are tender and golden brown. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  3. Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce. Season with salt and pepper to taste.
  4. Add the cooked gnocchi to the skillet, tossing gently to coat them in the creamy sauce. Cook for an additional minute to heat everything through. Serve immediately for the best flavor and texture.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • If you’re vegan, consider using cashew cream and nutritional yeast instead of cheese.
  • Gluten-free gnocchi is available for those with gluten sensitivities.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • When reheating, add a splash of cream or water to loosen the sauce.
