Description
A delightful combination of succulent shrimp infused with a rich garlic sauce served over creamy, buttery mashed potatoes.
Ingredients
Scale
- 1 lb (450 g) shrimp, peeled and deveined
- 4 tablespoons (56 g) butter
- 4 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 2 tablespoons (30 ml) lemon juice
- 2 tablespoons fresh parsley, chopped
- 2 lbs (900 g) potatoes, peeled and cut into chunks
- 1/2 cup (120 ml) heavy cream for mashed potatoes
- Salt and pepper to taste
Instructions
- Prepare the mashed potatoes by boiling the peeled and cubed potatoes in salted water until tender. Drain and return to the pot. Add butter, heavy cream, salt, and pepper, then mash until creamy and smooth.
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
- Once the shrimp are cooked, pour in the heavy cream and lemon juice. Stir well and let it simmer for a few minutes until the sauce thickens. Add chopped parsley for freshness.
- Serve the creamy garlic shrimp over a generous scoop of mashed potatoes, drizzling some of the sauce on top for extra flavor.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Reheat in a skillet over low heat, adding a splash of milk to restore creaminess.
- Avoid overcooking the shrimp to prevent a rubbery texture.
- Use a potato ricer for extra creamy mashed potatoes.
