Ingredients

Scale
  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. In a blender, combine the cottage cheese, mashed bananas, eggs, rolled oats, baking powder, vanilla extract, and salt. Blend until smooth and creamy.
  2. Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  4. Once cooked, transfer the pancakes to a plate. Serve warm with your favorite toppings like maple syrup, fresh fruit, or yogurt.

Notes

  • Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
  • To reheat, microwave for about 30 seconds or until warm.
