Description

A delightful treat combining the tropical flavors of coconut and lime, these Coconut Lime Energy Balls are nutritious and easy to make, requiring no baking.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons chia seeds
  • A pinch of salt (optional)

Instructions

  1. In a large bowl, mix the rolled oats, shredded coconut, chia seeds, and salt. Stir well to combine.
  2. Add the almond butter, honey (or maple syrup), lime juice, and lime zest to the dry mixture. Mix until well combined and sticky.
  3. Take small portions of the mixture (about 1 tablespoon) and roll them into balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. Refrigerate the energy balls for at least 30 minutes to firm up. Once chilled, they are ready to enjoy!

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • Freeze for up to three months in a freezer-safe container.
  • For a vegan option, use maple syrup instead of honey.
