Description

A delightful dessert combining creamy cheesecake with the warm, spicy flavor of cinnamon churros, topped with a crunchy cinnamon-sugar layer.

Ingredients

Scale
  • 16 oz cream cheese, softened (2 packages)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon (plus extra for dusting)
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted (1 stick)
  • ½ cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1 teaspoon of ground cinnamon. Press the mixture into the bottom of the prepared baking pan.
  3. Bake the crust for 10 minutes, or until lightly golden, then let it cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well combined.
  5. Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and remaining ground cinnamon, mixing until smooth.
  6. Pour the cheesecake filling over the cooled crust and spread it evenly.
  7. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  8. Allow the cheesecake to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
  9. Dust the top with powdered sugar and a sprinkle of cinnamon before slicing.
  10. Cut into squares and serve chilled.
