Description

Delicious Cinnamon Apple Cheesecake Bars combining warm flavors of cinnamon and apple with creamy cheesecake.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 cups diced apples (about 2 medium apples)
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar (for the apple mixture)
  • 1/2 teaspoon ground cinnamon (for the apple mixture)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Press into the bottom of the pan.
  3. Bake the crust for 8-10 minutes until lightly golden, then let it cool slightly.
  4. Toss diced apples with 1/4 cup of brown sugar and 1/2 teaspoon of ground cinnamon in a separate bowl.
  5. In a large mixing bowl, beat softened cream cheese until smooth, then gradually add 1 cup of granulated sugar. Mix in eggs one at a time, then stir in vanilla, flour, and 1 teaspoon of ground cinnamon.
  6. Pour the cheesecake batter over the cooled crust, then add the apple mixture on top.
  7. Gently swirl the cheesecake batter and apple mixture together with a knife.
  8. Bake for 35-40 minutes until the center is set and edges are lightly golden.
  9. Cool in the pan at room temperature, then refrigerate for at least 2 hours.
  10. Cut into squares and serve chilled or at room temperature.

Notes

  • For gluten-free, use gluten-free graham cracker crumbs.
  • For vegan, replace cream cheese with a dairy-free alternative.
  • Use honey or maple syrup instead of granulated sugar for a natural sweetener.
  • Chill the bars overnight for the best flavor and texture.
