Description

Indulge in the tropical delight of Chocolate-Dipped Mango Lassi Pops, a refreshing dessert that combines the creamy texture of yogurt with the sweet, fruity flavor of ripe mangoes.

Ingredients

Scale
  • 2 ripe mangoes (about 2 cups of mango puree)
  • 2 cups plain yogurt (preferably whole or Greek yogurt)
  • 2 tablespoons honey (adjust to taste)
  • 1 tablespoon lime juice (freshly squeezed)
  • 200 grams dark chocolate (about 7 oz)
  • 1/4 cup coconut flakes (unsweetened or sweetened, based on preference)

Instructions

  1. Peel the ripe mangoes, remove the pit, and cut the flesh into chunks. Place them in a blender or food processor.
  2. Blend the mango chunks until smooth, ensuring you have about 2 cups of mango puree.
  3. In a mixing bowl, combine the mango puree, yogurt, honey, and lime juice. Mix well until all ingredients are fully incorporated and smooth.
  4. Pour the mango lassi mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold.
  5. Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.
  6. When the popsicles are ready, melt the dark chocolate in a microwave-safe bowl or using a double boiler on the stove.
  7. Remove the popsicles from the molds and dip each one into the melted dark chocolate, allowing any excess chocolate to drip off.
  8. Immediately sprinkle the chocolate-dipped popsicles with coconut flakes while the chocolate is still wet.
  9. Place the dipped popsicles back on a parchment-lined baking sheet and return them to the freezer for about 15-30 minutes to allow the chocolate to set.
  10. Once the chocolate has hardened, your Chocolate-Dipped Mango Lassi Pops are ready to enjoy! Serve them as a refreshing dessert on a hot day.

Notes

  • For a dairy-free option, use coconut yogurt instead of plain yogurt.
  • Agave syrup or maple syrup can replace honey for a vegan alternative.
  • Experiment with different types of chocolate, such as milk or white chocolate, for varied flavors.
  • Try adding spices like cardamom or cinnamon for a unique twist on the flavor.
