  • Author: Chef Bella
  • Total Time: 50 minutes
  • Yield: 8 servings 1x
  • Diet: Vegetarian

Description

A delightful treat that combines the sweet and tart flavors of cherries with the nutty essence of almonds, wrapped in flaky pastry.

Ingredients

Scale
  • 1 sheet of puff pastry (thawed if frozen)
  • 1 cup fresh cherries, pitted and halved
  • 1 teaspoon almond extract
  • 2 tablespoons granulated sugar (plus extra for sprinkling)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar (for dusting)
  • 1/4 cup sliced almonds
  • 1 egg (for egg wash)
  • A pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, granulated sugar, almond extract, and a pinch of salt. Mix until smooth and creamy. Gently fold in the halved cherries.
  3. On a lightly floured surface, roll out the puff pastry sheet to about 1/8-inch thickness.
  4. Place the cream cheese and cherry mixture down the center of the puff pastry, leaving about 2 inches of space on each side. Sprinkle the sliced almonds over the filling.
  5. Cut slits about 1 inch apart along the sides of the pastry, then fold the slits over the filling, alternating sides to create a braided effect. Pinch the ends to seal.
  6. In a small bowl, beat the egg and brush it over the top of the strudel. Sprinkle a little extra granulated sugar on top.
  7. Place the assembled strudel on the prepared baking sheet and bake for 25-30 minutes, or until golden brown and puffed.
  8. Once baked, let it cool for a few minutes and dust the top with powdered sugar.

Notes

  • Store leftover strudel in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • To reheat, place slices in the oven at 350°F (175°C) for about 10 minutes.
  • For freezing, wrap the strudel tightly in plastic wrap and foil; it can be frozen for up to 3 months.
