Description

A delightful dish that combines rich flavors and comforting textures with creamy cheese, garlic butter sauce, and hearty ground beef.

Ingredients

  • Rotini pasta – 300 grams (about 10.5 oz)
  • Ground beef – 500 grams (about 1 lb)
  • Garlic – 4 cloves, minced
  • Unsalted butter – 100 grams (about 7 tablespoons)
  • Heavy cream – 240 ml (about 1 cup)
  • Shredded cheddar cheese – 200 grams (about 2 cups)
  • Grated Parmesan cheese – 50 grams (about 1/2 cup)
  • Salt – to taste
  • Black pepper – to taste
  • Fresh parsley – for garnish (optional)

Instructions

  1. Boil a large pot of salted water and cook the rotini pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.
  2. In a large skillet over medium heat, add the ground beef and cook until browned and fully cooked, breaking it up into small pieces. Drain excess fat and season with salt and black pepper.
  3. In the same skillet, reduce heat to low and add the unsalted butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and stir to combine. Allow to simmer for 2-3 minutes until slightly thickened. If too thick, add reserved pasta water to reach desired consistency. Stir in shredded cheddar and grated Parmesan until melted.
  5. Add the cooked rotini pasta and browned ground beef to the skillet, tossing everything together until well coated in the creamy sauce.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • To reheat, warm in the microwave or stovetop. For freezing, use a freezer-safe container and it can last up to three months.
  • Let the dish sit for a few minutes before serving to thicken the sauce.
