Description

A delightful blend of flavors in a creamy, zesty one-pan dish perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup long-grain rice
  • 1 packet taco seasoning (about 1 oz or 28 g)
  • 1 can (15 oz or 425 g) black beans, drained and rinsed
  • 1 can (15 oz or 425 g) corn, drained
  • 1 can (14.5 oz or 410 g) diced tomatoes, undrained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 cups chicken broth or water
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the long-grain rice and toast it for about 2-3 minutes, stirring frequently, until it becomes slightly golden.
  2. Pour in the chicken broth (or water), taco seasoning, black beans, corn, and diced tomatoes (with their juice). Stir well to combine all the ingredients.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  4. Once the rice is cooked, gently fold in the cooked chicken. Allow it to heat through for about 5 minutes.
  5. Sprinkle the shredded cheese evenly over the top of the skillet. Cover the skillet again and let it sit for a few minutes until the cheese is melted and bubbly.
  6. Remove the skillet from heat. Top with fresh cilantro and additional toppings if desired. Serve warm, directly from the skillet for a vibrant and hearty meal.

Notes

  • For a healthier option, use brown rice instead of white rice.
  • Swap chicken for ground turkey or tofu for a vegetarian version.
  • Use dairy-free cheese for a vegan alternative.
  • Feel free to add bell peppers or jalapeños for extra flavor.
