Cheesecake Pops

Cheesecake Pops

  • Author: Chef Bella

Description

Cheesecake Pops are a fun, frozen twist on traditional cheesecake—creamy, fruity, and served on a stick! These no-bake treats are perfect for summer gatherings or as a make-ahead dessert snack.

Ingredients

Scale
  • 2 (8-oz.) blocks cream cheese
  • 1/4 cup sour cream
  • 3/4 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp kosher salt
  • 1 cup chopped strawberries
  • 1/4 cup crushed graham crackers
  • 15 popsicle sticks

Instructions

  1. Cream the base: In a large bowl, beat the cream cheese until smooth and fluffy (about 2 minutes). Add sour cream, powdered sugar, vanilla, and salt. Mix until velvety and fully combined.
  2. Add strawberries: Fold in chopped strawberries gently using a spatula, distributing them evenly throughout the mixture.
  3. Fill and top: Spoon the cheesecake mixture into Dixie cups, filling each about 3/4 full. Sprinkle crushed graham crackers on top.
  4. Freeze: Insert a popsicle stick into each cup. Freeze for at least 4 hours or until solid. To serve, remove from cups by pressing from the bottom or running warm water over the outside.

Notes

  • For a dairy-free version, use plant-based cream cheese and sour cream.
  • Use gluten-free graham crackers for a gluten-free version.
  • Swap strawberries with blueberries, peaches, or blended fruit for variety.
  • Add lemon zest, cocoa powder, or fruit puree for a flavor twist.
