Description

Cheese and Egg Breakfast Quesadillas are a delightful way to start your day. They are cheesy, fluffy, and packed with flavor, perfect for busy mornings or leisurely brunches.

Ingredients

Scale
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup diced bell peppers (any color)(optional)
  • 1/2 cup diced onions(optional)
  • 2 tablespoons olive oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and bell peppers. Sauté for about 3-4 minutes, or until the onions are translucent and the peppers are tender. Remove the vegetables from the skillet and set them aside.
  3. In the same skillet, add the whisked eggs. Cook, stirring gently, until the eggs are scrambled and just set, about 2-3 minutes. Remove from heat and stir in the sautéed vegetables, cheddar cheese, and mozzarella cheese until well combined.
  4. Place a tortilla in the skillet over medium heat. Spoon a generous amount of the egg and cheese mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape.
  5. Add another tablespoon of olive oil to the skillet if needed. Cook the quesadilla for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.
  6. Remove the cooked quesadilla from the skillet and keep it warm. Repeat the process with the remaining tortillas and filling. Cut the quesadillas into wedges and serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, wrap each quesadilla tightly in plastic wrap and place them in a freezer bag.
  • To reheat, place the quesadilla in a skillet over low heat until warmed through.
