Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 tablespoon gelatin powder
- 1 teaspoon chai spices (ground cinnamon, ground cardamom, ground ginger, ground cloves)
- 1 teaspoon vanilla extract
- Maple syrup for drizzling
Instructions
- In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for 5-10 minutes.
- In a medium saucepan, combine heavy cream, whole milk, and granulated sugar over medium heat until the sugar dissolves and the mixture is warm.
- Stir in the chai spices and vanilla extract, allowing it to simmer for about 5 minutes.
- Remove from heat and add the bloomed gelatin, stirring until fully dissolved.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
- Divide the mixture into serving cups or molds and let cool at room temperature for 30 minutes before refrigerating.
- Refrigerate for at least 4 hours or until set.
- Run a knife around the edges and invert onto a plate, drizzling with maple syrup before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Do not boil the cream mixture to maintain texture.
- For a vegan version, use coconut milk and agar-agar instead of gelatin.
