Description
A delicious and healthy Carrot Cake Smoothie Bowl that combines the flavors of carrot cake with creamy yogurt and spices, topped with crunchy nuts and fresh fruits.
Ingredients
Scale
- 2 ripe bananas
- 1 cup grated carrots (about 2 medium carrots)
- 1 cup almond milk (unsweetened)
- 1/2 cup Greek yogurt
- 1/4 cup walnuts (plus extra for topping)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon honey (plus extra for drizzling)
- 1/4 cup shredded coconut (unsweetened)
Instructions
- Prepare the Ingredients: Peel the ripe bananas and break them into chunks. Grate the carrots using a box grater or food processor. Measure out the almond milk, Greek yogurt, walnuts, cinnamon, nutmeg, and honey.
- Blend the Base: In a blender, combine the banana chunks, grated carrots, almond milk, Greek yogurt, walnuts, cinnamon, nutmeg, and honey. Blend on high speed until the mixture is smooth and creamy.
- Adjust the Consistency: If the smoothie is too thick, add a little more almond milk to reach your desired consistency. Blend again until smooth.
- Serve the Smoothie Bowl: Pour the smoothie mixture into a bowl and create a rustic shape with slightly thicker edges.
- Add Toppings: Sprinkle the top with toasted walnuts, a dusting of cinnamon, and shredded coconut. Drizzle honey over the top for added sweetness.
Notes
- Store leftovers in an airtight container in the fridge and consume within 24 hours for optimal freshness.
- For a creamier texture, use frozen bananas.
- Experiment with different toppings to keep things exciting!
