Description

Delicious mini quiches filled with caramelized onions, mushrooms, and cheese, perfect for parties or family dinners.

Ingredients

Scale
  • 1 sheet of puff pastry (thawed if frozen)
  • 2 medium onions, thinly sliced
  • 1 cup of sliced mushrooms (button or cremini)
  • 3 large eggs
  • 1 cup of heavy cream
  • 1 cup of shredded cheese (Gruyère or cheddar)
  • 1 teaspoon of fresh thyme, chopped (or ½ teaspoon dried thyme)
  • ½ teaspoon of salt (to taste)
  • ¼ teaspoon of pepper (to taste)
  • 2 tablespoons of olive oil or butter (for cooking the onions and mushrooms)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out the puff pastry sheet and cut into squares or circles about 4 inches in size.
  3. Press each piece of puff pastry into the cups of a greased muffin tin.
  4. In a skillet, heat olive oil or butter and add sliced onions with a pinch of salt. Cook for 10-15 minutes until golden brown.
  5. Add sliced mushrooms to the skillet and cook for an additional 5-7 minutes until tender.
  6. In a mixing bowl, whisk together eggs, heavy cream, thyme, salt, and pepper. Stir in the sautéed onions and mushrooms, followed by the shredded cheese.
  7. Spoon the filling mixture into each puff pastry-lined cup, filling them about three-quarters full.
  8. Bake for 20-25 minutes until puffed and golden brown.
  9. Let cool in the tin for a few minutes before transferring to a serving platter.
