Description
A delightful dish that combines sweet and spicy flavors with perfectly cooked salmon and savory garlic rice.
Ingredients
Scale
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons Cajun seasoning
- 3 tablespoons honey
- 4 tablespoons unsalted butter (divided)
- 4 cloves garlic, minced
- 1 cup jasmine rice
- 2 cups chicken broth
- 2 green onions, chopped
- 1 lemon, cut into wedges
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- Pat the salmon fillets dry with paper towels. Season both sides of the fillets generously with Cajun seasoning, salt, and pepper.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once the butter is melted and bubbling, add the seasoned salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy and golden brown. Carefully flip the fillets and cook for another 3-4 minutes.
- In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 30 seconds until fragrant, then stir in the honey. Allow the mixture to bubble for a minute, then spoon the glaze over the salmon fillets, cooking for an additional minute to let the flavors meld.
- While the salmon is finishing, fluff the cooked jasmine rice with a fork and stir in the chopped green onions.
- Plate the garlic rice next to the salmon fillets. Drizzle any remaining honey butter glaze from the skillet over the salmon. Garnish with lemon wedges and additional green onions if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, place the salmon and rice in the microwave for 1-2 minutes or until heated through.
- For a gluten-free version, ensure your Cajun seasoning is gluten-free.
- For a vegan version, substitute the salmon with grilled portobello mushrooms and use vegan butter.
