Description

A moist and flavorful butter pecan cake loaf topped with rich cream cheese icing, perfect for dessert or an indulgent snack.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup sour cream
  • 1 cup pecans, chopped and toasted
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened (for icing)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for icing)
  • 2 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
  2. Toast chopped pecans in a dry skillet over medium heat for 5-7 minutes until fragrant. Set aside to cool.
  3. Cream together softened butter and granulated sugar using a mixer until light and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  6. Gradually mix the dry ingredients into the butter mixture, alternating with sour cream. Mix until just combined.
  7. Fold in toasted pecans.
  8. Pour the batter into the prepared pan, smooth the top, and bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the icing, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla and heavy cream to desired consistency.
  11. Once the cake is fully cooled, spread or pipe cream cheese icing over the top. Optionally drizzle some down the sides for decoration.

Notes

  • Ensure all ingredients are at room temperature before starting.
  • To avoid overmixing, fold in dry ingredients gently.
  • Store leftovers in the refrigerator for up to 4 days.
  • Optional: Add spices like cinnamon or nutmeg to the batter for extra warmth.
