Description

Blueberry Almond Baked Oatmeal Cups are a delightful treat that combines the sweetness of blueberries with the nutty flavor of almonds. These cups are not only delicious but also healthy, making them perfect for breakfast or a snack.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup almond milk
  • 1 cup fresh blueberries (plus extra for topping)
  • 1/2 cup almond flour
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup sliced almonds (for topping)
  • 1/4 teaspoon salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt (if using). Stir until well mixed.
  3. In another bowl, whisk together the almond milk, honey, eggs, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Gently fold in the fresh blueberries.
  5. Line a muffin tin with paper liners or grease it lightly. Divide the oatmeal mixture evenly among the muffin cups, filling each about 3/4 full. Sprinkle the tops with sliced almonds and a few extra blueberries.
  6. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Once baked, remove the oatmeal cups from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Notes

  • Store any leftover oatmeal cups in an airtight container in the refrigerator for up to five days.
  • They can also be kept in the freezer for up to three months.
  • To reheat, simply pop them in the microwave for about 30 seconds.
