  • 1/4 cup (50g) granulated sugar (for cheesecake layer)
  • 1 large egg (for cheesecake layer)
  • 1 teaspoon vanilla extract (for cheesecake layer)
  • 1/2 cup (120g) sour cream
  • 1 cup (150g) cherries, pitted and chopped (fresh or canned)

  • 1 tablespoon water (for cherry compote)
  • 1/2 cup (60g) graham cracker crumbs (optional, for crust)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Crush graham crackers into fine crumbs, mix with melted butter, and press firmly into the pan’s bottom.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, lemon juice, and zest until fully combined.
  6. Pour filling over the crust and smooth the top.
  7. Bake for 50–60 minutes until the center is set but slightly jiggly.
