Description

BBQ Meatloaf with Caramelized Onion is a delightful twist on a classic dish, featuring rich BBQ flavors and sweet caramelized onions for a moist and tender texture.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup BBQ sauce, plus extra for serving
  • 1 cup caramelized onions (about 2 medium onions, cooked down)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it or lining it with parchment paper.
  2. Slice 2 medium onions and cook them in a skillet over medium heat until soft and golden brown, about 15-20 minutes. Set aside to cool.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, 1/2 cup of BBQ sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Add the cooled caramelized onions and mix until well combined.
  4. Transfer the meat mixture into the prepared loaf pan, shaping it into a rustic loaf.
  5. Brush the top of the meatloaf with additional BBQ sauce.
  6. Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for about 10 minutes before slicing and serve warm with extra BBQ sauce on the side.

Notes

  • Don’t overmix the meat mixture; it can make the meatloaf tough.
  • Ensure your oven is preheated for even cooking.
