Apple Cinnamon Protein Bars are a delightful treat that combines the sweet taste of apples with the warm spice of cinnamon. These bars are not only delicious but also packed with protein, making them a perfect snack for any time of the day.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup protein powder
  • 1 cup diced apples (about 2 medium apples)
  • 1 teaspoon ground cinnamon
  • 1/2 cup honey
  • 1/2 cup almond butter
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, protein powder, ground cinnamon, and salt.
  3. In a separate bowl, mix together the honey, almond butter, and vanilla extract (if using).
  4. Pour the wet mixture into the bowl with the dry ingredients, add the diced apples and chopped walnuts, and stir until well combined.
  5. Transfer the mixture to the prepared baking dish and press it down firmly and evenly.
  6. Bake for about 25-30 minutes, or until the edges are golden brown and the center is set.
  7. Let it cool in the pan for about 10 minutes, then lift out using the parchment paper and cool completely before cutting into rectangular shapes.

Notes

  • For a nut-free version, use sunflower seed butter instead of almond butter.
  • If you’re vegan, replace honey with maple syrup.
  • Store in an airtight container at room temperature for up to a week or in the refrigerator for up to two weeks.
  • Freeze the bars for up to three months, wrapped individually in plastic wrap.
