Description

Apple Cider Donut Muffins are a delightful treat that combines the warm flavors of fall with the comforting texture of a muffin. These muffins are soft, moist, and bursting with the sweet and spicy notes of apple cider, cinnamon, and nutmeg.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup apple cider
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and ground nutmeg until well combined.
  3. In another bowl, whisk together the apple cider, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, mix the granulated sugar and ground cinnamon in a small bowl.
  8. Once the muffins are done, cool them in the tin for about 5 minutes, then roll the tops in the cinnamon sugar mixture while still warm.

Notes

  • For a dairy-free option, use coconut oil instead of butter and almond milk instead of regular milk.
  • To make it gluten-free, substitute all-purpose flour with a gluten-free flour blend.
  • For a lower sugar option, consider using a sugar substitute like stevia or monk fruit sweetener.
  • For added texture, fold in chopped apples or nuts into the batter.
